My freezer specialty is buying a huge pack,(or more than one) of side ribs, asking the butcher to slice it right down the middle for me (to resemble baby back ribs), cut the ribs into 3 bone pieces, boil the ribs for an hour with lotsa spices (whatever you prefer.. i use onions, garlic), the house will smell wonderful... when done cooking (about an hour on a slow rolling boil), allow to cool then package in ziploc bags in meal size portions. Anytime you need a quick meal, just pull out a bag, baste with lotsa bbq sauce while warming up on the bbq!! Voila. But I found this super easy crock pot recipe for Tai Beef.<BR/>Cut Steaks or roast into bite size chunks. Put into a crockpot with a small bag of baby carrots. Pour one bottle of Peanut sauce over them and cook on low for 6-8 hours. When done pour in a can of coconut milk and stir. Serve over cooked rice. We're carnivores over here and sauce without meat stashed somewhere is a crime- truly. I love the sausage lasagna from Costco (great deal - comes in a two pack), chicken pot pies (yummm), and I like to double my chicken casserole recipe and save one for later (2 cups spiral noodles, cooked chopped chicken, cheddar cheese, can of mushroom soup, cup of milk, cup of chicken broth, celery, onion, some Mrs. Dash - bake at 350 for one hour). <BR/><BR/>And anytime I put pork chops or chicken in the freezer that's intended for the bbq later, I'll put them in a ziploc bag with a marinade so that they'll marinade as they thaw out.
