Miss Bella requested an Eiffel Tower cake for her birthday. After an hour of looking at possibilities on the internet, it wasn't looking very promising.

I'm no Des when it comes to cake decorating, but I do really like it. I need some tips on how to get this smooth -- I tried.
Voila....
I'm for quick... those are inedible foam flowers. Stickers, to be exact, but they did not stick to the icing. Perfect color.
Another tip I need, how do you end the shell technique? I can never never quite tuck it back in.

ReplyDeleteFor a smooth cake (although I think yours looks great) you could do a crumb coat: thin the icing with water and apply that in a thin layer over the cake. let it dry. Now you are going to use the frosting and frost on top of that crumb coat. You might be able to get even smoother if you use your spatula dipped in water and drained off and then go over the frosting. For a really slick and smooth surface you could use rolled fondant. No suggestions for shell tuck. I haven't done that one in ages, probably for that very reason. The cake is sooo cute! You did a great job.

ReplyDeleteWhat a great cake! It is really cute, and perfect for a 16 yr old. When I took a class in cake decorating I learned a great smoothing trick. Right after you frost the final base layer of frosting gently lay a piece of Viva paper towel on it and softly rub. All of the lines will go away and it will be nice and smooth. It really works! Yours doesn't look like it needs much help...really cool!

ReplyDeleteGreat cake! Like ALyson said, I use the Viva paper towel method to get really smooth icing. Use a crusting buttercream frosting and ice the cake as smoothly as you can. Let the cake sit for 10-15 minutes and then lay a paper towel on top (Viva has no embossed pattern, which is why you want that brand), and use your hands to rub the frosted cake until it is smooth. Move the paper towel around the entire cake repeating the whole process. I've done it quite a few times, and it works very well! Good luck, and awesome job on the cake!
